Japanese Dried Plum Duck Fried Rice


Wind- Dried Duck Leg 1pc
Rice 1 cup
Onion 1pc
Garlic (2 cloves)
Turmeric 2 pcs
Spring onion 5 stalks
Plum Wine 2 tbsp
Dried Plum4 pcs
Honey 2 tbsp
Egg 2 pc
Salt Some
Oil Some


  1. Cook the Wind- dried duck leg with hot water for 2 minutes, put the Wind- dried duck leg and rice and cook together with Panasonic Rice Cooker. Leave it for cold down.

  2. Mince all the onion, garlic, turmeric and spring onion.

  3. Remove the bone of the Wind- dried duck leg and finely chop the duck; Remove the Dried Plum seed and cut in dice.

  4. Add oil and garlic into the pan, stir fry until it turns to golden brown then add in the garlic, turmeric and salt.

  5. When the onion become translucent, add in the Wind- dried duck, honey and Plum wine, quickly add the eggs after the moisture evaporation.

  6. Put the remain ingredients and stir fry until it become dry.


  1. Cut the extra duck grease before cooking the Wind-Dried Duck Leg. Add the grease when you fry the rice can increase the flavor of rice.
  2. Adding the plum in plum wine can increase the sweetness of rice; adding Japanese sour plum can increase the sourness of the rice.
