Salt Baked Pear with Sweet Walnuts Back

Ingredients

Egg White 8 pcs
Pear 2 pcs
Salt 800g
Walnut 150g
Corn Syrup 125ml
Maple Syrup 125ml
Earl Grey Tea 100ml
Vanilla Essence 1tbsp

Directions

  1. Toast the walnuts in the Steam Oven, select "Convection Mode - Without Preheat" and bake for 18 minutes.
  2. In a large bowl, whisk the egg white until tripled its volume.
  3. Mix the salt to the egg white until it becomes sticky and clumpy.
  4. Cut a small part from the bottom of the pear so it can stand.
  5. Cover and pack the pear with the salt mixture evenly but not too thick.
  6. Put the pears on a metal tray lined with baking sheet. Put in the Steam Oven and select "Convection Mode - Without Preheat", bake for 45 minutes.
  7. Pour the corn syrup and maple syrup in a saucepan.
  8. Use medium heat to heat up the syrup until they are bubbling. Then lower heat for simmering for about 10 minutes.
  9. Crush the toasted walnuts when it is cooled.
  10. Stir in the earl grey tea and vanilla essence. Simmer for 3 minutes.
  11. Mix in the toasted walnuts to the syrup and serve.
  12. Take out the pears when done. Crack open the salt layer and serve the pear.
